Micah's Curry

We don't follow recipes too much at our house but this is about how making curry goes...
-INGREDIENTS:
4 cans coconut milk
1 package lemongrass (available at Harmon's)
1 small can bamboo shoots
3-4 tablespoon ginger-root. just buy one ginger root and zest it. 
2-4 cloves of garlic
1 onion
4-5 carrots 
3-4 potatoes
2 heaping spoonfuls of Mae Ploy yellow curry paste. (available at Asian food stores in Provo or Vegas)  or we can give you some.

the rest of these ingredients are optional. I always add green pepper and nix the chicken and Micah does the opposite. 
3 chicken thighs... if you want chicken
2 green bell peppers


DIRECTIONS:
in a large pot add coconut milk, lemongrass, zested ginger, garlic fresh pressed, chopped onion and the curry... Put on stovetop on medium heat. Then slice up your veggies, chicken(optional) and potatoes and put them in. Let cook for about 2 hrs. Serve over rice... we usually do Basmati or Jasmine.

  1. That sounds so good I need to try it. Danny actually gave us that Mae ploy but I didn't know what to do with it. I think a dinner party is in order.
