Butternut Squash Flat Bread With Cheddar and Pine Nuts

Ingredients
1 pound store-bought pizza dough, thawed if frozen
cornmeal for the pan
1 pound butternut squash—peeled, seeded, and sliced 1/4 inch thick
1/2 red onion, thinly sliced
1/4 cup pine nuts
1 tablespoon fresh thyme leaves
2 tablespoons olive oil
kosher salt and black pepper
1 1/2 cups grated extra-sharp Cheddar (6 ounces)
1 bunch arugula, thick stems discarded (about 4 cups)

Directions
Heat oven to 400° F. Shape the dough into a large oval and place on a cornmeal-dusted baking sheet.
In a large bowl, toss the squash, onion, pine nuts, thyme, 1 tablespoon of the oil, ½ teaspoon salt, and ¼ teaspoon pepper. Scatter over the dough and sprinkle with the cheese.
Bake until golden brown and crisp, 25 to 30 minutes.
Toss the arugula with the remaining tablespoon of oil and ¼ teaspoon each salt and pepper. Serve with the flat bread.

*i didn't use pinenuts cause i was too cheap. and you can buy frozen pizza dough at harmon's for $1.50...or make your own. and costco has cubed butternut squash. and i got a pizza stone at costco for $25 and we like it!

    So I am not allowed to post on here yet but since I just wrote these out for the 'blog it' blog here are some things we've been making lately:

    Rice Curry:
    2 carrots
    2 potatoes
    1 can chick peas
    2 cups sticky rice (I use jasmine rice)
    1 tbsp sugar
    1 can coconut milk
    1 jar calcutta masala simmer sauce (I found at whole foods, this is the only one I've found I like)

    Make rice according to directions. When rice is almost done, dump half a can of coconut milk in it. Steam vegetables and chick peas then add simmer sauce and the other half can of coconut milk and sugar. Simmer together for 10-15 minutes. Serve simmer sauce/vegetable mixture over rice.

    Marinated Chicken: ( I make this with a yummy salad)
    1 cup sprite or similar
    1/2 cup soy sauce
    1/2 cup canola or vegetable oil
    2 cloves garlic

    Dice up garlic cloves combine with all ingredients add uncooked chicken or chicken substitute (I use the quorn brand) into tupperware, marinade overnight if possible or at least 2 hours before cooking. Grill or cook on stove 15 minutes.
