2 for 2

two good recipes this week...
Stuffed Red Peppers
However many red bell peppers you are making like 1 per person.
1 lb. hamburger local is best!!
1/2 onion chopped finely
2 tomatoes diced
3 cloves of garlic
2 tsp. thyme
1 tsp. re pepper flakes
1/2 tsp. cayenne optional
2 tbsp. salt
1 tbsp. pepper
2 cups corn cooked
1/2 c. honey
1 egg slightly beaten
1 cup pepper jack cheese cut into small cubes

1. remove all seeds and membranes from peppers
steam for 7 to 10 min. over boiling water. set aside
2. saute hamburger and onion in large skillet over med. heat or until browned. Add tom. garlic spices salt and pepper and cook 1 more min. transfer to large bowl
3. add corn drained and honey. adjust seasonings to  taste. Toss in beaten egg and cheese.

Spoon filling into pepper boats, heaping slightly. Place in a greased baking dish nesting the peppers snugly  bake in preheated oven at 350 for 25 to 35 min. until peppers are soft, filling is hot and starting to crisp.


Cauliflower and Pasta Bake
penne pasta 1 package 1 2/3 c.
1 head cauliflower (cut into florets)
2 tbsp. olive oil
1 red onion
2 cloves garlic
4 tbsp. all purpose flour
4 c. milk
2 c. shredded parmesan cheese
3 handfuls basil
3 slices day old bread crumbs
1/4 c. butter extra melted.

preheat 350
cook pasta in salted water until al dente. drain set aside
steam cauliflower for 10 min. or until tender
heat olive oil in frying pan
fry garlic and onions over med. heat for 5 min. or until onion are soft.
combine in a bowl with the cauliflower.
Melt butter in lg. frying pan. blend in flour and cook stirring constantly for 1 min. Gradually whisk in milk. Stir constantly until mixture boils and thickens.
remove from heat and add in 1 1/4 c. cheese. and basil
add the cauliflower, pasta and onions to the sauce and mix throughly.
spoon mixture into large oven proof dish. break bread into nice sized pieces mix into mixture. sprinkle the top with remaining parmesan cheese. Bake for 35 to 40 min. or until top is golden.
